Jen has been a vegetarian since August 2007 and became vegan in January 2015.
Prior to converting to veganism, Jen authored the cookbook Festive Feasts: Meals and Memories from Halloween to Christmas. The perfect holiday cookbook for the family omnivore.
She has been featured on KSL’s Studio 5, ABC’s Good Things Utah, Woman’s Day Magazine, and wowOwow.com.
Jen has been a regularly featured contributor to CookingwithRuthie.com, The36thAvenue.com, MadeFromPinterest.net, Remodelaholic.com, RecipeLion.com, and more. She is a budding photographer and formerly was the photographer for AddyLou.com a subsidiary of Modern Display.
Jen works full time as an Executive Assistant and previously volunteered her time for a local botanical garden where she formerly served as Vice President of Jordan Valley’s Home & Garden Club, the first of its kind in the Nation.
