Quick and Easy Berry Cheesecake Parfaits

I think when I was asleep some aliens kidnapped me and invaded my body because I have been craving cheese-Cheese-CHEESE lately, which is completely abnormal for me (nope, I’m not pregnant). Although I normally love cheese, this time around I’ve been possessed by it: crackers with cheese, corn chips with cheese, soup topped with cheese, balsamic cheese, manchengo cheese…anything I can get my hands on that has cheese.

Is there such a thing as a cheese addiction? Maybe I should Google it because I think I fall into that classification and I have the aliens all to blame.

When I created these Berry Cheesecake Parfaits I couldn’t believe how quick and easy they were to make. You can whip it up in about 15 minutes and assemble in another 15 mins.

What’s in it? Soft and creamy brie cheese and cream cheese, a smorgasboard of antioxidant fruits like strawberries, raspberries, and blueberries; topped with almond slices. One bite and it explodes in your mouth with refreshing sweetness.

It’s the perfect light dessert that satisfies the cheese-aholic in me.

  • 1 8-ounce round Brie cheese, softened
  • 1 8-ounce package cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 6 cups sliced strawberries, blueberries, raspberries, and/or cut-up mixed fruit
  • 1 3.75-ounce package sliced almonds
  1. Trim off the rind of the Brie cheese. With an electric mixer on medium speed, beat together Brie cheese, cream cheese, sugar, and lemon juice until almost smooth. Set aside.
  2. Alternately layer 8 small parfait glasses with cream cheese, fruit, and almonds until glasses are full; ending with fruit on top. Top with almonds. Serve immediately or cover and chill for up to 4 hours.
