How many of you love Cafe’ Rio’s salad dressings? I’m in love with their cilantro-lime vinaigrette–especially on their veggie tostada! As I was scouring the Internet, I came upon this recipe at My Fav Family Recipes.

Beings Cafe Rio’s dressing is a “secret” restaurant recipe, the following is the closest I’ve come to the real thing. It’s delish. I made up a batch just tonight. My family is loving it, too.

Ingredients

  • 2 tomatillos (found in the produce section of the grocery store)
  • 1/2 bunch cilantro
  • 2 cloves garlic (I used one)
  • 1 Tbsp canned jalapeno, diced
  • Juice of 2 limes
  • 1 cup balsamic vinaigrette salad dressing (I used Kraft)

Instructions

  1. In a blender or food processor, add the tomatillos, cilantro, garlic, jalapenos, and juice of limes. Blend until smooth.
  2. Add the balsamic vinaigrette salad dressing and pulse until well combined. Store in an airtight container and refrigerate to allow the flavors to meld together (overnight is best).

    Hi wondering if the omitting of oil is correct?

    • Hi. I’m not really sure what you mean by “omitting of oil”? The Balsamic Vinaigrette referenced in the recipe is a pre-made dressing that can be bought in grocery stores that has oil already in it. Hopefully I’m answering your questions correctly and that it helps clarify. Let me know if you have any other questions.

  2. I have tried a few copycat recipes for this dressing and I must say that this is absolutely the best recipe for this dressing by far! I keep it in my frige all the time. Also I put it in my homemade salsa, it really kicks up the flavor! Thank you for sharing this great recipe!
