Chocolate Buttercream Frosting

Serves: 3 cups
Ingredients
  • 1/2 cup vegetable shortening
  • 1/2 cup vegan butter, softened
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon pure vanilla extract
  • 4 cups confectioners' sugar, sifted
  • 6-8 tablespoons non-dairy milk (use more or less, if necessary)
Instructions
  1. In a large mixing bowl, beat together the shortening and butter with an electric mixer. Add cocoa and vanilla and continue beating until well combined.
  2. Turn electric mixer to medium speed and slowly beat in the confectioners’ sugar to the shortening mixture 1/2 cup at a time; scraping down the sides as you go. After each addition of sugar, add 1 tablespoon milk until you reach the desired consistency and forsting is light and fluffy.
  3. Store in an airtight container in the fridge for up to two weeks.
Notes
For stiff consistency: Decrease milk from 6-8 tablespoons to 3-4 tablespoons.
For darker chocolate: Increase cocoa from 1/2 cup to 3/4 - 1 cup.
