Easy Meatloaf

http://www.dreamstime.com/-image17243015Where’s mom now that you need her? This savory meatloaf is simple enough that even your teenage child, college student, or newly wed can make it. It’s their turn to impress the folks!

Ingredients

  • 1 lb. ground beef
  • 1 cup dry bread crumbs (original or seasoned)
  • 2 eggs, beaten
  • 1/2 cup onion, finely diced
  • 1/4 cup green pepper, diced (optional)
  • 1/2 cup mushrooms, diced (optional)
  • 1/4 cup red pepper (optional)
  • 1 clove garlic, minced (optional)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups tomato sauce, divided

Instructions

  1. Combine ground beef, bread crumbs, eggs, onion, green pepper, red pepper, mushrooms, garlic, salt, pepper, and 1 cup tomato sauce; use hands to knead the mixture until it is well combined.
  2. Shape into a 9×6 bread loaf pan and bake at 350 degrees Fahrenheit for 30 minutes. (For less mess, line the bread pan with foil.)
  3. Pour remaining 1 cup tomato sauce over loaf and bake 30 minutes longer, or until done.
  4. Slice and serve immediately.
