Easy English Muffin Loaves

Authentic flavor, chewy on the inside and crusty outside muffins turned into sliced bread.
Serves: 2 loaves
  • 3 tablespoons yeast
  • 1/2 cup water
  • 1 tsp sugar
  • 5- 6 cups flour
  • 1 tsp salt
  • 1/4 tsp baking soda
  • 2 cups almond milk
  • 1/4 cup cornmeal for dusting pans
  1. Grease 2 loaf pans and coat with corn meal. Place water in a cup and running hand under hot water tap until it is hot but not so hot you can't keep your fingers under it. Add yeast and stir to dissolve. Add sugar and stir. Set aside.
  2. Place 1/2 of the flour, salt and baking soda into a Bosch machine and stir to combine. Add milk and yeast mixture. Turn machine on and stir until combined into a soft dough. Knead for 7 minutes on medium speed.
  3. Separate into two loaves and gently place into the loaf pans. Sprinkle remaining cornmeal over the top of each loaf.
  4. Cover with a wet dishtowel and allow to rise in a warm place until they are nearly doubled in size. ( about 45 min) Bake at 400 degrees for 25 minutes. Cool before removing from pans. Slice and enjoy with butter and little smear of your favorite jam or jelly
  5. For round muffins bake in a round can about 4 inches in diameter. Be sure to grease and dust the can before baking. Allow enough space for the dough to rise in the can. Do not over fill.
