Ingredients
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) pinto beans rinsed and drained
  • 1 can (15 ounces) white corn, rinsed and drained
  • 1 can (4 ounces) chopped green chiles (with juice)
  • 1 red bell pepper, cored, seeded and finely chopped
  • 1 green bell pepper, cored, seeded and finely chopped
  • 1 small red onion, finely chopped
  • 1 avocado, chopped
  • 2 large tomatoes, seeded and chopped
  • 1 clove garlic, minced or pressed (optional)
  • 1 bunch cilantro leaves, finely chopped (optional)
Dressing
  • 1/2 cup rice vinegar
  • 1/4 cup olive oil
  • 1/4 cup granulated sugar
  • 1/2 teaspoon garlic powder
Instructions
For Dip:
  1. In a large bowl, toss together all ingredients and set aside.
For Dressing
  1. In a small saucepan, add vinegar, olive oil, sugar, and garlic powder and bring to a boil over medium high heat; remove and set aside to cool. Add to bean mixture and toss together until well blended.
  2. Serve with tortilla chips or scoop up with celergy or red bell pepper.
