Serves: 20 bars
Shortbread Crust
  • 2 cups rolled oats
  • 1/2 cup + 2 tablespoons coconut flour (can also substitute all-purpose flour)
  • 1/2 cup melted coconut oil (measure after it is melted)
  • 1/2 cup pure maple syrup
  • 2 teaspoons pure vanilla extract
Caramel Layer
  • 1/2 cup almond butter (can also substitute peanut butter)
  • 1/2 cup pure maple syrup (grade B)
  • 1/3 cup coconut oil
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon salt
Chocolate Layer
  • 1/2 cup + 2 tablespoons cacao powder
  • 1/2 cup coconut oil
  • 4 tablespoons pure maple syrup
Shortbread Layer
  1. Preheat oven to 350 degrees Fahrenheit. Lightly grease a 9 x 13-inch baking pan with coconut oil.
  2. In a food processor, add oats and process for 3 to 4 minutes or until finely ground into fine flour.
  3. In a large mixing bowl, gently mix together oat flour and remaining ingredients for the crust.
  4. Transfer to prepared baking dish and using your hands, work mixture to edges of pan until evenly spread across the pan. Using a fork, prick 8-10 holes in the dough. Bake for 12-15 minutes or until lightly golden brown. Transfer pan to a wire rack to cool completely.
Caramel Layer
  1. Meanwhile, in a small saucepan over medium low heat, stir together all ingredients for the caramel layer until melted (about 3-5 minutes). Remove pan from stove and let cool to room temperature.
  2. Pour caramel sauce over the cooled shortbread crust and spread out evenly with a greased spatula. Place in the freezer for about 25 minutes to set.
Chocolate Layer
  1. Wash out sauce pan and over low heat, stir together all ingredients until melted. Pour over caramel layer and spread out evenly with a greased spatula. Return to freezer for another 25 minutes to set.
  2. Remove from freezer and using a very sharp knife, cut into squares. Store leftovers in the refrigerator up to 1 week.
If you have a square tart pan, it makes it easier to pop the bars out of the pan once frozen and set to cut, but it's not necessary.
