Good Old-Fashioned Pancakes

  • 1 1/2 cups all-purpose flourĀ (for a healthier twist, I like to use half white and half whole wheat flour)
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 1/4 cups milk or milk substitute
  • (vegan: soy milk)
  • 1 egg
  • (vegan egg replacer: 1 1/2 teaspoons Ener-G plus 2 tablespoons warm water. Mix thoroughly before adding to the recipe)
  • 3 tablespoons butter, melted
  • (vegan: substitute with Earth Balance)
  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the mil, egg, and melted butter; mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat (or 400 degrees Fahrenheit). Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
