Fat-Free Fudge Brownies!

Inside me lives a skinny woman crying to get out…but I can usually shut her up with chocolate!

There’s something you should know about these brownies…they are fat free. You heard me…fat FREE. Just saying the word “free” is liberating. Say it with me F-R-E-E! Can you imagine how liberating my hips and thighs will feel knowing that I’m eating a dessert that is not only delicious but fat FREE? Maybe that skinny woman will get out after all!

Wait, let’s back up for a minute. I said fat free, right? Usually when you take the fat out of baking, taste or texture somehow get compromised. I’m a texture freak, okay? It’s got to feel right and taste right or it goes right in the garbage! I made these brownies the first time as written below, but they came out REALLY thin, so I doubled them up the second time and *bingo* that did the trick.

Yields: 16 servings

Ingredients

  • 3/4 cup unbleached flour
  • 1/4 cup plus 2 tablespoons cocoa powder
  • 1 cup sugar
  • 1/4 teaspoon salt (optional)
  • 1/3 cup unsweetened applesauce
  • 3 egg whites, well beaten
  • 1 teaspoon vanilla extract (or try mint!)
  • 1/4 cup chopped walnuts (optional. Keep in mind that adding nuts will not keep this low in fat!)

Instructions

  1. Combine the flour, cocoa, sugar, and salt, if desired, and stir to mix well. Stir in the applesauce, egg whites, and vanilla extract. Fold in the nuts, if desired.
  2. Coat an 8-inch square pan with nonstick cooking spray. Spread the batter evenly in the pan and bake at 325 degrees Fahrenheit for 23-25 minutes, or just until the edges are firm and the center is almost set.
  3. Cool, cut into squares, and serve!

For a thicker brownie, double the recipe.

        Try it you will like it and it is healthy too as gives you fiber too.
        FOR BROWNIE LOVERS WHO DON’T LOVE FAT

        2 points for 1 12th of the recipe

        1 box brownie mix
        1 can of black beans

        Puree black beans , do not drain
        Mix bean puree in the dry brownie mix

        You can make 24 cupcake brownies(fill only half way) at 1 point or 12 (filled to the top)at 2 points

        Bake 350 degrees for 20 minutes til done, ovens vary.

        Fat free because egg and oil is omitted , there maybe fat in the dry mix though.

        NOTE

        I used small muffin tins and got 36 two bite types. So each was less than a point.
