So, I’m thinking with as many people who are freaking out over their digestive health these days (which we all should) and going gluten free, I wanted to provide you an amazing flourless cookie recipe for the traditional chocolate-chip cookie. Yes, I did say flourless. Flourless peanut butter chocolate chip cookies. See, I told you the recipe would include chocolate! I have so many friends who are celiac or who are wheat intolerant and I want to provide them and you with a healthier, happier Holiday Season. I care about YOU and your health and I want to help make your lives better.

Serves: 2 dozen
Ingredients
  • 1 cup creamy peanut butter (try using crunchy peanut butter too!)
  • 3/4 cup sugar
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips.
Instructions
  1. Line a cookie sheet with parchment paper and preheat oven to 325 degrees F.
  2. Mix together peanut butter, sugar, eggs, baking soda and salt until creamy and smooth. Fold in chocolate chips.
  3. Drop dough by rounded tablespoons onto prepared baking sheet by rounded about 2" apart.
  4. Bake for 12-15 minutes or until lightly golden brown. Remove from oven and let cool on baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

  3. I have been making these for 13 years! Everyone loves them because they are the best! I always have to make a double batch because they go so fast. It works out to be a small jar of peanut butter so I do less dishes because I don’t have to measure it.
