Because last night I ate ice cream for dinner and topped it with this delicious and easy homemade peach syrup.

You heard me right…I ate it for DINNER. How wrong is that? Sometimes going straight for dessert is more right, than wrong, and more satisfying than the actual meal. Okay, I might be justifying, but I’m okay with that. :)

I was home alone and didn’t want to cook a large meal. I sat and stared in the cupboard a long while trying to decide what to eat for dinner. Cereal was looking good. Pancakes were looking better. But nothing really sounded good, you know?

So I opened the fridge, then the freezer and B I N G O the ice cream jumped out at me. I went back to the cupboard remembering the can of peaches and decided to make this homemade peach syrup and top it over the ice cream. Yummmmm. Perfectly sweet, warm, thick and satisfying.

The next morning I warmed it up and had it on some yummy Belgian Waffles.

Homemade Peach Syrup

Ingredients
  • 29-ounce can peach slices in heavy syrup, reserving syrup
  • 1 tablespoon cornstarch + 1 tablespoon water
  • 2 tablespoons butter
  • 2 teaspoons lemon juice
  • 1/4 teaspoon grated orange peel
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon almond extract
  • Diced peaches (optional)
Instructions
  1. In a medium sauce pan over medium heat, warm the reserved syrup.
  2. In a small bowl, whisk together cornstarch and water and gradually blend the cornstarch mixture to reserved syrup and stir until well combined.
  3. Add butter, lemon juice, orange peel, nutmeg and almond extract. Cook over medium heat stirring constantly until thickened and bubbly.
  4. If desired, dice peaches and add to sauce. Heat thoroughly.
