One of my favorite Italian restaurants to dine at is Johnny Carino’s. Once I have a dish that I love at a restaurant, I am a creature of habit. Without doubt, I will order the same thing over and over again. Why ruin a good thing, you know? This angel hair with artichokes meal is the one main dish I order.

We’re the same way at home…once we have a dish we love, Mr. Chef and I will make it over and over again until the kids cry ENOUGH!

I fell in love with Johnny Carino’s Angel Hair with Artichokes dish several years ago and now that’s all I’ll order. I even got Mr. Chef hooked on it, but he will add a ton more items to his dish to the point that it no longer resembles Angel Hair with Artichokes! LOL.

Ingredients
  • 12 ounces Angel Hair Pasta
  • 3 ounces extra virgin olive oil
  • 2 teaspoons fresh minced garlic
  • 1 jar (12 ounces) quartered marinated artichoke hearts + 4 tablespoons artichoke juice
  • 1 cup diced roma tomatoes
  • 1 cup black olives, chopped
  • 1 jar (2.4 ounces) capers + caper juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup freshly chopped basil
  • Dairy-free grated Parmesan (Such as Go Veggi!), to garnish (optional)
  • Freshly chopped Italian parsley, to garnish (optional)
Instructions
  1. Cook pasta according to package instructions.
  2. Meanwhile, in a large skillet warm oil over medium heat. Add garlic and saute until the garlic turns a light golden color.
  3. Stir in artichokes and artichoke juice, tomatoes, olives, capers and caper juice, salt and pepper. Continue sauteeing until vegetables are warmed through (about 7-10 minutes).
  4. Remove from heat and toss in freshly chopped basil.
  5. Divide pasta onto four large plates, top with vegetable mixture and a little of the juice sauce, garnish with Parmesan and parsley.
  6. Serve warm.
