Miso Soup Recipe

Miso soup is the most popular soup in Japan. It is light, nourishing, and easy-to-digest. The Japanese soup consists of “dashi” (the soup stock made of dried kelp (seaweed) and dried bonito (fish)) mixed with softened miso paste (a Japanese seasoning produced with fermented soybeans and other grains rich in protein and nutrients). Depending on the region and season, different ingredients are added in. The solid ingredients are chosen to reflect the seasons and to provide contrast of color, texture, and flavor. Ingredients include mushrooms, potatoes, seaweed, onion, shrimp, fish, and sliced daikon.

 

Depending on your preference, you can use yellow, white, or red miso paste (fermented soybean paste)–the two you most likely will find at your local grocery store is red and white. The red miso is saltier and white miso is a little lighter in flavor. A little goes a long way, so don’t buy more miso than necessary–however, it does keep forever in the fridge! Some grocery stores arry it in the refrigerated section or it can be found in Asian markets.

Healthful Benefits

Researchers at Japan’s National Cancer Center claim that miso soup cuts the risk of breast cancer due to its isoflavones and fermented soy. And just like Americans who like to eat Chicken Noodle Soup when sick, Miso soup is a wonderful dish to eat because of it’s protein and high electrolyte content. Antioxidants in the soup strengthen the immune system and miso provides beneficial bacteria necessary for good digestion. Miso soup is also used for weight loss programs as it is the perfect low-cal appetizer used as a filler before a meal so you don’t eat as much, and Dr. Oz espouses it to be one of his top three superfoods for blasting belly fat. (Dr. Oz and Breakthrough Belly Blaster in reducing cellulite). It’s inexpensive and good to eat any time of the day!

This is a “brothy” soup and is meant to be used more as an appetizer than a meal.

Ingredients
  • 2 teaspoons dashi granules (optional)
  • 4 cups water
  • 3 or more tablespoons miso paste (to taste)
  • 1 (8 ounce) package firm silken tofu, diced
  • 2 green onions, chopped
Instructions
  1. In a medium saucepan over medium-high heat, bring water and dashi to a boil. Reduce heat to medium and whisk in miso paste until well combined. Add tofu and green onion. Simmer gently for 2 to 3 minutes before serving.
Notes
It's best not to boil the miso as this will ruin some of it's healthy properties as well as change the flavor of the soup. If you want to make this vegan or vegetarian, omit the dashi granules.

    • Mushrooms would be great! I haven’t heard of sriracha, so I had to look it up! Once I saw a picture of it, I knew what it was. That would be delicious, too.
