Supreme Nacho Libre Nachos

When I ate these, I just had to call them Nacho Libre Nachos.

These Nacho Libre Nachos are nacho normal nachos. No, they are thee best macho nachos dripping in cheese and other delectable toppings like black beans, beef, onion, salsa, and olives, plus any other toppings you love. Bakerette.com #appetizers #recipe #snack

Macho Nachos seemed like a good name for these nachos, but I prefer Nacho Libre Nachos better, which literally means “Free Nacho”. And one bite of these nachos will set you free. Seriously.

Boy: “Can’t we ever have like a salad or something?”
Nacho: “Be grateful, Juan Pablo. Today is especially delicious!”

Yep, Nacho was right. Today’s recipe is especially delicious.

These Nacho Libre Nachos are nacho average nacho. :) (Try saying that 3 times really fast.) No. They are dripping in cheese, beef, black beans, and any other delectable toppings you might like…chopped tomatoes, sour cream, guacamole, whatever! Did you try my low-fat guacamole? It would taste fabulous with this recipe. THEE BEST nachos ever! It’s a meal in itself, but you can have it for an appetizer or snack, too. Do you have guests coming over? This would make a fabulous snack for them to munch on.

Nacho: “Don’t you want a taste of the glory? See what it tastes like?”

Ya, I know you do. I can see your mouth salivating now.

BTW, did anyone see the movie Nacho Libre? Pretty darn corny, but it definitely had it’s funny one-liners.

Yields: 8-10 servings

Ingredients

  • 1 1/2 pounds ground beef, cooked
  • 1 packet taco seasoning
  • 2 (16 ounce) cans black beans, drained
  • 1 (16 ounce) jar salsa, water drained
  • 1 cup onion, finely chopped
  • 1/2 cup olives, chopped
  • 1/2 pound cheddar cheese, grated
  • 1 bag tortilla chips
  • Garnish: chopped tomato, sour cream, guacamole (optional)

Instructions

  1. Preheat oven to 350F degrees.
  2. In a large skillet, brown the ground beef and drain fat. Stir in packet of taco seasoning and 1/2 cup water. Simmer for 5 minutes.
  3. Add the  drained black beans and drained salsa, and heat thoroughly. Place in a 9 x 13-inch oven-safe casserole dish. Layer with chopped onion, olives, and grated cheese. Bake for 20 minutes or until cheese is melted.
  4. Serve over tortilla chips. If desired, garnish with tomatoes, sour cream, and guacamole.
