Pumpkin Cream Cheese Dip

I recently went to the Farmers Market and bought some delicious red and green apples. I had so many that I wanted to make something with them. Apple pie? No, that takes too long. Apple streudel. Sounds delicious but it will have to wait until a weekend project. I happened to be “pinning” on Pinterest and came upon this delicious whipped fruit dip at What’s Cooking With Ruthie [dot] com that is made out of pumpkin puree. Pumpkin Cream Cheese Dip. My family was snacking on it all night. A perfect surprise for the fall.

Yields: 12 servings

Ingredients

  • 1 (8 oz) cream cheese, softened (for a lower calorie option, try low-fat cream cheese)
  • 1 cup Greek yogurt
  • 3/4 cup pumpkin puree
  • 1/2 cup powdered sugar
  • 1 teaspoon All Spice
  • 4-5 apples, cored and sliced

Instructions

  1. Place cream cheese in a medium mixing bowl. Using a hand mixer, beat cream cheese until smooth.
  2. Add yogurt and pumpkin puree and mix until smooth
  3. Add powdered sugar and All Spice and mix until incorporated.
  4. Place in a serving bowl and refrigerate until serving.
  5. Serve with apple slices, bananas, strawberries or even graham crackers!

Tip: Ruthie used cinnamon for her spice. If you don’t have All Spice on hand, you can use cinnamon. For a more pumpkin pie-type flavor, try 1/4 teaspoon ginger, 1/8 teaspoon ground cloves, and 1/2 teaspoon cinnamon.
