Holy crap! Are these not the cutest rolls you’ve ever seen? They look like miniature pumpkins! So dang cute. So dang clever. So dang easy to make. So dang easy to eat: Let’s see, I ate one after they baked. I ate one up to my brother’s house for Thanksgiving, and I ate one for Thanksgiving dinner. And then when I thought I was done eating for the day, I ate one for a bed-time snack. Yep. I was the stuffed turkey for Thanksgiving.

  • Use one of your favorite roll recipes
  • 1 tablespoon vegan butter, melted
  • 18-20 whole pecans, halved
  1. Line two sheet pans with parchment paper and set aside.
  2. Depending on the sizse of roll you want, form 1- to 2-inch balls of dough. Turn a dough ball onto a lightly floured surface. Press down on the dough with your hand to slightly flatten it.
  3. Using a sharp paring knife, slice 8 segments around the dough leaving the center uncut--It will end up looking like a flower. Place the dough on the prepared sheet pan. Using your finger, poke a hole in the center of the dough.Your "pumpkin" is starting to take shape! Repeat the process.
  4. Cover the rolls and let rise in a warm place until double in size (about 30
  5. mins to 1 hour). After the rolls rise, you may notice that the indentation in the center of the roll has disappeared. Just gently re-poke a hole in the center with your finger.
  6. Bake at 325 degrees Fahrenheit for 15-20 minutes or until golden brown. Remove and brush each roll with melted butter to give them a shine.
  7. Taking a sliced pecan half, insert it into the center hole, which now becomes your stem! Cute, huh? (Note: You will notice in my photo that my "stem" isn't a pecan. I ran out, so I used sliced almonds instead. However, the pecan is the better option.)
