Jax from Cooking With Jax {dot} comHello Bakerette readers!  I’m Jax over at Cooking With Jax, a blog of original recipes updated every Sunday.  I’m excited to be posting for Jen today! Her blog is absolutely amazing and I’m so thrilled to be featured on it.

I fully believe that anything that can be easily made from scratch should.  I try to swap healthy ingredients whenever possible, and these Raspberry Lemonade Popsicles are no exception.  Popsicles and lemonade are both something that are always a huge hit in our house, especially during the hot summer months! I live in the Rocky Mountains, so it cools down quite a bit at night, however, during the day it can still get pretty warm!  I love nothing more than cooling off with a frosty glass of ice cold lemonade – or a refreshing fruit Popsicle.  I figured why not combine the two for a treat that’s sure to cool you down on those hot summer days?

Serves: 6 Popsicles
Ingredients
  • ½ pint (6oz) fresh raspberries
  • 1 medium lemon (about 2 tbsp lemon juice)
  • 3-4 tbsp agave
  • 1 cup water
Instructions
  1. Puree raspberries and lemon juice together in a food processor or mini blender. Strain seeds using cheesecloth or a fine mesh sieve.
  2. Add agave and water, stirring well to combine. Pour into popsicle mold and freeze for 1 hour to partially set. Insert popsicle sticks and continue to freeze until solid, about 6-8 hours.

 Thank you Jax! I am FRYING outside right now with these 102+ temperatures. These Raspeberry Lemonade Popsicles look like they will cure me from the heat right now! So delicious and healthy, too!
