I love to eat sandwiches stacked high with hummus, cucumbers, tomatoes, lettuce, avocado, sprouts and this sweet and tangy condiment. It seals the deal. Know what I’m saying? I know you get me. It’s also fantastic on pizzas under all of that gooey cheese, or tossed in a salad, or served over crackers or crostinis.

Red Onion Marmalade

Ingredients
  • 1 tablespoon safflower or grapeseed oil (a high-heat oil)
  • 2 large red onions, very thinly sliced
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh rosemary, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons agave nectar
Instructions
  1. Heat a large non-stick skillet over high heat. When hot, add oil and wait for it to shimmer.
  2. Carefully add onions, salt, pepper, and rosemary and cook on high heat for 2 minutes, stirring constantly.
  3. Reduce heat to medium and cook an additional 15-20 minutes stirring frequently to caramelize onions.
  4. Stir in agave nectar and balsamic vinegar and remove the pan from heat.
  5. Let cool and place in a glass container with a tight-fitting lid and refrigerate up to 2 weeks.
