It’s Wednesday and to help you through your week, I made you this Salmon Milano with Basil Pesto Butter. FAVE. It’s a simple, easy, and flavorful dish. You won’t be disappointed. Pinky swear.

I’m having a salmon moment. I mean, a HUGE salmon moment. As in I-can’t-get-enough-of-salmon moment. Like I’ve been making my Baked Honey Glazed Salmon, and Pan Seared Salmon with Creamy Garlic Dijon Sauce. Then there’s the Marinated Baked Salmon, which, by the way, is one of my family’s favorite, and my good ole Baked Salmon. If you’ve tried any of those yummy dishes, you know you’ll love this Salmon Milano with Basil Pesto Butter.

Have you had Costco’s Salmon Milano with Basil Pesto Butter? That’s what inspired this recipe and I think I absolutely matched it, if not exceeded, Costco’s specialty.  Really, who’s going to say no to butter-soaked salmon?

Serves: 4 - 6
Ingredients
  • 4 - 6 salmon patties
  • Fresh dill
  • Salt and pepper to taste
[b]Basil Pesto Butter[/b]
  • 1/4 cup fresh basil leaves
  • 3 cloves garlic
  • 1/2 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
Instructions
  1. Preheat oven to 400 degrees Fahrenheit. Place salmon in an ungreased baking dish and salt and pepper to taste. Top each salmon patty with a sprig of fresh dill and set aside.

Basil Pesto Butter
  1. In a food processor, add basil and garlic and pulse until chopped. Add lemon juice and salt and continue to pulse until well combined. Add butter and process until smooth and creamy.
  2. Use a small melon baller, if desired, and place a heaping scoop of basil pesto on top of the dill on each salmon patty

  1. Bake for 25-30 minutes or to an internal temperature of 145 degrees F. Serve while warm.
