Can you tell I’m a Pinterest freak? I get so many fun ideas from stalking watching and pinning recipes on Pinterest. Like this Santa hat I saw on Erica’s Sweet Tooth that I tweaked a little. Think “chocolate dipped strawberries”, only better because you get CHEWY chocolate with sweet strawberries and cream CHEESE frosting. Did I just die and go to heaven? Chocolate AND cheese in one? Just pinch me.
Yep, it’s a chocolate brownie bites piped with cream cheese frosting and topped with strawberries.
Ingredients
- 1 brownie mix
- 24 small strawberries, tops cut off
- 1 batch of cream cheese frosting
Instructions
- Preheat oven to 350F.
- Prepare a pre-made brownie mix according to box instructions, or better yet make your own if you’ve got the time! (I love this fat-free brownie recipe). Pour into a prepared greased mini-muffin tin filling each tin cup 3/4 full.
- Bake for 25 minutes or until a toothpick entered into the center comes out clean. Remove from the oven and cool.
- In the meantime, cut the tops of the greens off the strawberries with a knife so the strawberry lays flat when you turn it upside down onto the freshly cut top.
- Remove brownies from pan. Place the strawberries point-side-up on the center of each brownie bite. Pipe a ring of frosting around the strawberry for the white trim of Santa’s hat and top each strawberry point with a small drop of frosting.
Note: If you don’t have a mini muffin tin, you can bake your own pan of brownies and cool. Using a small round cookie or biscuit cutter or a round fondant cutter, cut out rounds of brownies from the pan, then follow steps 4 and 5.
White chocolate can be used in place of frosting. Using 2 cups white chocolate chips and 1 teaspoon shortening, melt chocolate in a small saucepan on medium heat. Transfer to a piping bag (or Ziploc bag with the corner snipped to create your own piping bag) and follow steps 4 and 5.
