The smooth refreshing flavors of mint, strawberry and lime complement each other so nicely in this sparkling strawberry-mint limeade.
The other night I woke up in the middle of the night singing a really catchy song, or at least 3 lines of a really catchy song. I sang it to myself a couple times and thought “wow, this could be a hit”. I searched my brain to think if I’d ever heard it before or if I had actually written a hit in my sleep. Deciding I must have heard it somewhere I turned over to go back to sleep, but then I remembered that Stephanie Meyer, the author of the mega big-selling Twilight series, had gotten the story line for her books while she slept. I sat up, found pen and paper, and scribbled down the words, truly believing I would sell the song, buy an island and retire in style. In my defense, I had knocked myself out with a heavy dose of Nyquil a few hours earlier because of a wicked cold….
The next morning I had a vague memory of doing something spectacular in the night and I tried to remember the song. Nothing… I read my scribbled notes and could sort of remember the words, but for the life of me I couldn’t remember the tune. Arghhhhhhh, where are the creepy stalkers who video people in their sleep when you need them, right??
I think I heard that’s how the Beatles started….it may not have been Nyquil hough.
I would have bought each of you an island also by the way…
Nothing to do with with drink….just a slice of my life (if you’re all wondering if I’m still on cold medicine as I’m writing this email, the answer would be yes… at least I’m not driving).
Take a chug of this delicious sparkling strawberry mint limeade for me. With my nose all stuffed up, I can’t taste a thing, but I guaratee you’ll love this favorite drink of mine.
For an adult-friendly version, substitute 1 (750-mililter) bottle of chilled sparkling wine and designate a responsible driver please :)
- 3 cups sliced strawberries
- 1/2 cup lossely packed fresh mint leaves
- 1/2 cup fresh lime juice
- 1/4 cup water
- 1/4 cup agave nectar
- 3 cups chilled club soda, divided
- In a blender, puree together strawberries, mint leaves, lime juice, water, and agave until smooth (about 1 minute).
- Divide mixture between 6 glasses. Slowly pour 1/2 cup club soda into each glass and gently stir to combine.
- If desired, garnish with whole strawberries and mint.
