Tender Slow Cooker Pot Roast

This is a flavorful, fall-apart roast with plenty of juices that can be thickened for gravy. If you have leftovers, save the juice from the meat and have french dip sandwiches the next night for dinner. It’s wonderful!

INGREDIENTS

  • 3-4 lb. boneless beef chuck roast
  • 2 cups water
  • 2 Aus Jus gravy mix packets
  • 1 green pepper, diced
  • 1/2 onion, thinly sliced
  • 1 clove of garlic, minced
  • 1 small package baby carrots (optional)
  • salt and pepper to taste

DIRECTIONS

  1. In a large 5-quart slow cooker, add 2 cups water and 2 packets of Aus Jus gravy packets. Mix well with a fork or whisk.
  2. In a large skillet, sear meat in the center of the pan for 4 minutes on each side. Heavily salt and pepper all sides of the roast to taste.
  3. Place roast in the slow cooker with the water and Aus Jus.
  4. Spread evenly over the roast the sliced green peppers, onion, garlic, and baby carrots.
  5. cover and cook on low for 6-8 hours or on high for 4-5 hours. The meat will literally fall apart when done!
  6. Thicken the stock from the roast for homemade gravy!
